Short Courses Australia is an approved (NSW Approval No. 65101) Food Safety Supervisor (FSS) training provider as listed on the NSW Food Authority website.
A Food Safety Supervisor is required to hold a NSW Food Authority FSS Certificate which includes the national unit competencies SITXFSA006 Participate in safe food handling practices (Level 2) and SITXFSA005 Use hygienic practices for food safety (Level 1).
Successful students will receive a Hard Copy of the NSW Food Authority certificate on the day of the training.
Courses are delivered face-to-face in a classroom setting at our colleges across Parramatta and New South Wales.
This (8) eight-hour course incorporates both Level 1 - Food Safety (SITXFSA005) and Level 2 - Food Safety Supervisor (SITXFSA006), covering the knowledge required to handle food safely during the storage, preparation, display, service and disposal of food, including all pre-course learning requirements and activities.
Food Safety Supervisors (FSS) oversee day-to-day food handling operations and ensure risks are managed. The NSW FSS program helps businesses meet their obligations under the Food Standards Code, NSW Food Act and Food Regulation.
The role of an FSS is to minimise the risk of customers becoming ill from food poisoning because of incorrect handling and preparation of food. All retail, hospitality and food service businesses need to appoint at least one FSS per premises if the food they prepare and serve is:
- Ready-to-eat
- Potentially hazardous, that is, needs temperature control
- NOT sold and served in the supplier's original package
Broadly, this includes all businesses selling potentially hazardous food to the public that are not licensed by the Food Authority, such as:
- Cafes
- Restaurants
- Quick service venues
- Takeaway shops
- Pubs and clubs with food service areas
- Mobile vendors
- Home-based businesses
- Caterers
- Motels
- Supermarkets selling potentially hazardous food (such as hot chickens)
- Outlets that sell food through third-party ordering apps
Also included are:
- School canteens
- Children's services that provide meals, including out of school hours care
- Supermarkets
- Delicatessens
- Greengrocers
- Coffee vendors that sell unpackaged, potentially hazardous, ready-to-eat food
- Boarding schools
- Correctional centres
The food safety supervisor course covers the following criteria:
SITXFSA005
- Follow hygiene procedures and identify food hazards
- Report any personal health issues
- Prevent food contamination.
- Prevent cross-contamination by washing hands
SITXFSA006
- Follow food safety program
- Store food safely
- Prepare food safely
- Provide safe single use items
- Maintain a clean environment
- Dispose of food safely

Failing to comply with the Food Act 2003 (the Act) may lead to:
- Refusal of the registration, renewal or transfer of the registration of the food premises
- Revocation or suspension of registration of the food premises

Completion
Upon successful completion of this NSW Food Safety Supervisor course, you will receive a NSW Food Authority Certificate, which is required by legislation as well as the following hospitality certificates with the national unit of competence:

- SITXFSA006 Participate in safe food handling practices
- SITSS00069 Food Safety Supervision Skill Set

*Students can use the statement of attainments SITXFSA005 + SITXFSA006 in VIC, ACT, QLD, SA, NT, TAS and WA.

"The barista training course was a really fun experience: we learned about different coffees and how to make them, how to work the coffee machine and also practiced how to do latte art. You get to drink the coffee that you make too, and it?s helpful if you want to get a job. Only downside is that lots of coffee and milk is wasted but I guess it can?t be helped"
